Does anybody know of some places to rent horses for rides and what parts of the las cruses areas they are availabale?

This ranch is just a few miles west of Las Cruces, and may serve your needs. Although I know nothing personally about the ranch, or their horseback rides. I would contact them directly for specifics. It is near Fairview, NM.
You would be riding in typical desert country, with great views of the Organ Mountains to the east of Las Cruces, and past cacti of various types. The Organ Mountains are one of the most attractive mountain ranges in the Southwest, especially at sunset.
